Eggplant Pomodoro: Layers of panko dusted eggplant, fire roasted tomatoes and mozzarella cheese with a Gorgonzola blush cream over pasta is one of several vegetarian dishes offered at the Rio Station in Rio Grande.
RIO GRANDE – To keep up with the ever-changing trends on planet Earth, and in consideration of a growing concern for healthy eating, Rio Station now includes a selection of vegetarian and gluten-free dishes. Some change periodically, others remain the same.
Named after the daughter of Executive Chef Richard Rutherford III, Ellie’s Option tempts any palette with selections like the Rio Garden Burger, Eggplant Pomodoro, the Pasta Party and the Veggie Stir-Fry.
Lil’ Ellie’s gluten-free section includes the Rio’s “World Famous” Crab Cake, Flat Iron Steak and Gluten-Free Pasta.
The menu is marked with symbols throughout to indicate vegetarian and gluten-free offerings.
“We do our best to avoid cross-contamination of our gluten-free items, but if someone has a severe allergy to gluten, they need to be aware that we do use flour in our kitchen,” Chef explained.
Also, due to supplier provided information, he noted that they cannot guarantee against unknown gluten content. To help to provide the best dining experience, Rio Station encourages diners to let their server know if they have any other allergies that can influence their dining choices.
