Drink of the Week: Clam Digger

This week’s winning cocktail is a salute to our County’s coastal nature. Known as a “Bloody Caesar” elsewhere, the “Clam Digger” is a filling favorite for those with a taste for the sea. The Clam Digger is much like a traditional Bloody Mary, but the tomato juice base is replaced with Clamato juice. For those less familiar with this broth-juice hybrid, it contains reconstituted tomato juice, numerous spices, and clam broth. Mulligan’s manager Jon showed us how a signature Clam Digger is truly done. First, he grabs a tall glass and prepares to add the proper spices. A couple shakes of salt, pepper, and celery salt and a splash of Worcestershire sauce are the first key ingredients. Next, Jon adds a few dashes of Tabasco sauce and two ounces of vodka to the Clam Digger concoction. He then fills the remainder of the glass with Clamato juice, shakes vigorously, and finishes the cocktail with a squeeze of lemon and lime. Lemon and lime garnishes are carefully placed on the Clam Digger’s rim to add extra pops of color to the drink’s rich red hue.
