Mixology 101 – Bartender of the Week

The Ice House Bar & Restaurant of Wildwood has become a top choice for Cape May County dwellers looking to cool down after a long, hot summer day. The open-air, spacious roof deck features its own 20-plus seat bar and overlooks scenic Otten’s Harbor. Bartender Joe Doyle keeps the cool drinks coming and deck-lovers’ thirst quenched. As a Communications professor at LaSalle University in the fall and winter terms, Joe uses his professor saavy in the summer months to mix up killer cocktails.

Joe recommends that Cape May County patrons sample the Ice House beautiful harbor view with one of his signature drinks in hand. First, Joe mixes up a “Wipe Out” (pictured on the left). Made with Malibu Coconut Rum, Pineapple and Passion Fruit Rum, and Orange, Pineapple, and Cranberry juices, the Wipe Out tastes like an island summer day in a glass. The citrus rum and juices blend perfectly with the sweet hints of pineapple an coconut, creating a tropical fusion you have to taste to believe. Experience the tastes and sea breeze of the tropics without leaving the Jersey Shore while enjoying this signature drink from the Ice House roof deck.

Joe reaches for a few bottles and his mixer once again, and recommends this second signature cocktail as an aperitif to an incredible Ice House dining experience. Made with Stolichnaya Raspberry Cointreau, Lime Juice, Cranberry Juice, and Sparkling Wine, the “Ice Tini” (pictured on the right) is the perfect refresher to awaken the palate. The acidic lime juice and sweet raspberry liquor interact beautifully in a fruity burst while the sparkling wine adds just the right amount of carbonation. Compare the Ice Tini to a unique and flavorful upscale version of a traditional wine spritzer.
