The Art of Candy Making, A Douglass Tradition

At Douglass Fudge & Candies, they make the candy they sell. Made fresh on the premises daily by fourth generation Douglass family members, all fudge and candies are made with the freshest and finest ingredients available and according to the century-old original recipes.

The Douglass Fudge family prides itself on tradition and of course, old family values. We took a behind-the-scenes peek into the making of their authentic salt water taffy. After it is made with Douglass’ tried a true recipe, it is pulled on an industrial taffy puller machine while coloring and flavor are simultaneously added. From the puller, it is shaped and fed through a packaging machine in which it is individually wrapped.

Before you’ve tasted Douglass, you’ve probably never tasted real salt water taffy… Unfortunately, most taffy is made with corn syrup and inexpensive imitation flavors. Douglass taffy is made with higher sugar content, some corn syrup, and the most expensive natural flavors. The Douglass Family continues to improve upon family recipes dating back to 1919 and hopes you will find their taffy incomparable. Do not leave the shore without this staple souvenir. Douglass’ Saltwater Taffy Assortment includes their “Original Recipe” Long and Petite Taffy, old-fashioned caramel filled taffy, and their “signature” Butter Toffee. Each one pound, two ounce assortment is beautifully arranged in their famous plaid box. Some call it gourmet…Douglass calls it business as usual.

As their name suggests, the family’s decadent fudge is what truly made them famous. “Fresh cream and butter make it the finest,” the Douglass brothers state. Douglass fresh cream fudge begins with light cream, homogenized milk, creamed sugar (fondant) and pure butter. And corn syrup is never used to thicken Douglass Fudge. Only the finest ingredients available are used in the original recipe created by the Douglass family in 1925 to give you the “creamiest” fudge you’ll ever experience. Grab a one pound assorted box of Douglass “creamy” fudge to sample their six most popular flavors – Chocolate, Chocolate Walnut, Chocolate Peanut Butter, Vanilla, Vanilla Pecan, and Coconut Cream.

The art of candy making is a Douglass legacy. First, each ingredient is taste tested and inspected before actual production begins. Only then does the art of candy making begin. A tremendous amount of expertise is required to master complicated machinery, precise cooking times and proper blending and testing techniques. All Douglass Candies and Fudge are made daily in their own kitchens so preservatives are never needed. Their commitment to quality is evident only after one samples one of these fine candies.

Some of their must-try homemade chocolates include the Douglass Butter Crunch, Mint Bark, Coconut Cups, Butter Creams, Cherry Bark, Almond Bark, Almond Delight, Cashew & Pecan Patties, and Chocolate Covered Marshmallows. Douglass’ Molasses Paddles are an all-American classic! They begin with soft, chewy real molasses caramel and are then drenched in the finest premium dark chocolate. New for the 2014 season, Douglass Fudge now features homemade caramel apples, macaroons, a variety of chocolate covered fruit, and fresh Irish potatoes.
