Food & Fun: A Golden New Year’s Eve at the Golden Inn

Ring in the New Year with Executive Chef Rob Noble as he “spices” up the Golden Inn’s restaurant menus for the holiday season.

For Noble, the new season means new spices. “This time of year I like to use a lot of coriander, thyme, rosemary, green peppercorns, fennel pollen and bay leaf. They have such an aromatic scent that lingers in the air as you eat. They mix well with the colder weather and really open your senses,” Noble says.

The 30-year-old Cape May Court House resident was hired as a sous chef at the Golden Inn in June 2014, and in May 2015 donned the toque of Executive Chef. He now oversees the daily operations of three restaurants at the busy vacation resort hotel, a popular venue for beach getaways, weddings, business conferences and holiday parties.

This New Year’s Eve, Noble is cooking up a delicious four-course dinner made with local, sustainable ingredients that he believes are some of the best local produce and seafood in the country. He likes to keep his food simple, but don’t be fooled. Noble explains, “When it comes to making a menu or cooking a dish, I always try to keep it as simple as possible, something that all guests can relate to, then I put my twist on it. It’s worked really well for me throughout the years.” Noble appreciates the Golden Inn giving him free rein to explore his creativity in the kitchen, allowing him to create a variety of dishes for diners’ different tastes.
